Wow, thanks for that link. I have made shrimp etouffee but never crawfish cause they are so hard to get. I'll check it out.

Etoufee is one of the best tasting of the cajun dishes. The roux has to be DARK.

One of my worst food experiences was being convinced by a native cajun that the only way to eat crawfish was to boil em, break the tails off, suck the heads and THEN eat the tail meat. Good Godsdamn that head goo is disgusting. Loved the crawfish boil though!

I'm Louisiana born and raised and don't suck the heads. I'm sorry, but no one has ever convinced me to do that. But I do love a good crawfish boil. Crawfish is wonderful to eat, but the actual crawfish boil is much more.

When spring comes and the season opens, you get together with a bunch of friends and stand around a table eating crawfish, drinking beer and having good conversation. It is a social event.

Any social event that involves sitting around for hours eating, drinking, and talking, then drinking and eating some more, that's the kind of social event I want to be at!

When I lived down in Florida they did the same kind of thing, only it was a fish fry. Often catfish but not always, although it ALWAYS included hush puppies on the side. Same activity over all, eating, drinking, talking, eating some more, drinking some more.... God times!

Hello to all the Buckeye fans!

Hello! I just wanted to come by and offer a hello and add my .02
I'm so excited about this game. Despite all the talk about the BCS I really feel like the two best teams in the country are playing.

I've read through most of this thread and agree with all the recommendations.
Commander's Palace- nothing bad to say. I've loved eating here all my life. They're booked solid for dinner Jan 6th, but lunch is still available. I'm sure they're not booked for Jan 7th at 8:00 .

If anyone is staying in Baton Rouge or other surrounding areas to New Orleans please feel free to ask about restaurant/accommodation ideas.

Go to Cafe du Monde Cafe Du Monde - Original French Market Coffee Stand New Orleans and get some beignets. The French Market is very close, so I'd also visit it. It's a big outdoor market that has food and all kinds of local artist set ups.
You're also bordering Jackson Square, which IMO, is one of the best parts of the city.

Uptown New Orleans has a lot of amazing restaurants and beautiful homes. My favorite restaurant is Pascale Manales. They're famous for their BBQ Shrimp. Another favorite is Commander's Palace.

New Orleans, like all major cities, has some dodgy parts. If you stick to the French Quarter and Uptown you will be fine. I'd still take precautions because large events draw out the city's criminal elements.

Ladies- shopping on Magazine street is amazing.


Several things I've been asked about are:

Weather- I dont know how y'all in Ohio do it! Seriously, I have no concept of 26 degrees for days at a time. It's gotten that low, but it is for one night. If it snows (by snow I mean half frozen slush that melts as soon as it hits the ground) the entire city/state shuts down. We have no idea how to drive in snow, and we do not have sand or salt machines like y'all do up Nawth. It could be 36 degrees, it could be 70...Last year for the ND game it was not too cold, when we played Illinois it snowed.

Our fans- We love our football, we love our Tigers, we love our Suthun traditions, we love to cook and feed people. If you can take what we dish then you'll be king of our tailgate. I've gone to visit friend?s tailgates and have seen opposing fans who just met them. We have our "fans" who feel like they have to act like sub humans to opposing fans...my greatest wish for y'all fans is that you will not encounter these people. I'll never understand the mentality to treat someone poorly because they like another team. We do love to rib and tease, but it's all in good fun. Come with a good attitude and you'll do just fine.

Our traditions-
Our live mascot, Mike the Tiger, is very special to all of our fans.





We've had a live mascot for over 70 years, and our newest Mike is Mike VI. Mike VI made his debut for the Florida game. He's lead around the stadium (in a cage) before the game. I don?t know if they are planning on making the trip to New Orleans or not- I really hope they will. PETA give us a lot of crap about having a live mascot. I have no idea why. If the Buddhists have it right, and all my years at Catholic school religion classes are for the birds, then I'd like to come back as Mike. He has a habitat that's amazing. The next phase is to add fish to his stream. I'd go back for my second degree just to watch him fish in his habitat!

The Golden Band from Tigerland- they won the 2002 Sudler Trophy. They're awesome. I'm excited to see the Ohio script I hear so much about. From what I'm told they play a song that makes the hair on the back of your neck stand up. Same for us.





Tailgating- We're known for our tailgating. We're known for not only grilling hamburgers (on game day? What's a hamburger?), but all kinds of local dishes. Jambalaya, gumbo (on a cold day they're is nothing better), boiled shrimp...you name it and it's cooked.

There are others, but since the game isn?t going to be at Tiger Stadium you wont get to experience them. Your polar bear swim before the UM game sounds cool.

For LSU talk I'd visit TigerForums.com - LSU football - LSU sports - LSU Tigers - LSU message board. It's not a place to talk smack which is why I like it. There are other sites where talking smack is accepted. I avoid them.
