From everything I've read - most people are guessing that the court will uphold the will of the voters but will continue to honor the marriages that took place prior to the vote (the time period between the original court decision and November).

Universal gay marriage is inevitable. This is just another small crack in the wall. With acceptance comes the diminished presence of unhappiness and uneasiness with the concept of same sex couples having lives together. At some point the "so what" quotient will be at a tipping point and nobody will care so much.
It is mainly the elderly and the Miss California's of the world who have a serious problem with it, and their numbers are diminishing. Just like the elimination of segregation, what was once unthinkable becomes the mundane and accepted.
Inevitable? Eventually maybe, but I don't think it's anywhere near as close to fruition as you are making it out to be.
