They will most likely remove the skin for you if you ask. I'd advise against this if you are going to smoke the belly. The skin helps protect the fat from the heat if the belly is getting smoked. They skin is pretty easy to remove when the belly is still warm, too.

What he said. Smoked pork skin is a pretty awesome thing in its own right too. I crisped some up, diced it fine and baked it into a good bacon fat crusted cornbread. It did not suck. If you're thinking about hanging for pancetta, have the butcher do it. I have really good knives, and it was still a pain in the ass to skin the raw pork belly for pancetta.

Had my mind blown today!

Was talking to a co-worker and she was speaking of the superiority of homemade bacon from hogs slaughtered on her family's own farm.

I asked if they kept the grease for cooking and she then said something I will never forget.

She stated that they would save the bacon grease and when they would go camping, they would pop popcorn in the bacon grease instead of normal oil.

Bacon, fucking-flavored, popcorn!

My dad did this when I was I kid. We had one of the old fashioned poppers that was basically a large saucepan with a lid that had a crank to stir the corn as it popped. Best damn popcorn I ever ate! I still want to find one of those poppers.

Prison, McDonald's ban for woman who shot at drive-thru after baconless burgers

GRAND RAPIDS, MI – The woman who fired a 9mm handgun at a McDonald's drive-thru window after twice failing to get bacon on her burger will spend the next three to seven years deciding if jail cuisine is more to her liking.

Shaneka Torres was quickly convicted March 25 by a Kent County Circuit Court jury of shooting at an occupied building and felony use of a firearm after a two-day trial.

During her sentencing hearing Tuesday, April 21, a judge ordered her to stay away from all McDonald's restaurants. It will be up to the Michigan Department of Corrections to decide if that ban continues after she is released from prison. She is also ordered to pay $1,500 for the damage caused by the shooting.

Torres was returning to the McDonald's on 28th Street SE near Madison Avenue for the second time Feb. 9, 2014, to get a replacement burger after employees hours earlier had not given her a burger with the bacon she requested.

Upon her return to the McDonald's, her new burger did not have bacon, and then she fired a bullet at the McDonald's. No one was injured in the shooting, but the bullet went into the restaurant.
