So this is a weird one. The peppers are stuffed with diced red onion, zucchini, Yellow squash, tomatoes, corn, and basil.. oh and garlic, first you give that all a bath in a sautee pan (Griswold #8 for example) with a full stick of butter. Then bind it up as much as you want with parmesan cheese and bread crumbs. Stuff in the peppers, grill for about an IPA and a half. Super awesomer.

Also Berkshire loin chops with rosemary honey glaze.

You mean like that?

I had gator taco's in florida tasted a lot like chicken. Not sure it's worth the extra cost in a resturant but homemade might change my opinion on it
Yeah, that’s my take on all the gator ive had. It seems just fine, but largely a novelty because it seems to command a premium over other protein options and not necessarily “better”. I’ll happily eat it, but I’m not going out of my way to do so anymore.

that’s where the prep work/seasoning comes in.

outside of South Louisiana it gonna taste like chicken.

a GOOD restaurant here (or homemade) you won’t think it tastes like chicken.
doesn’t really taste like anything else that i can think of.

ok, so i know most of y’all prolly don’t have access to fresh gator meat, but if you do:

1st step is beat the living hell out of it. and i mean beat that bitch like a pimp would do to a hooker that was skimming off the top. my wife has a lil stainless mallet, flat on one side, spiked in other. use the spiked side and go apeshit on this fucker for a while.
Meat will be tough and rubbery if you don’t kick his ass properly.

then cut it into cubes/strips/chunks/nuggets or however you want it cut.

drown it overnight, covered and in fridge in a wash made of: milk, couple raw eggs, a little mustard, some Tony’s, garlic power, onion powder, a splash of lemon juice, and some Louisiana Hot Sauce.
note: the Louisiana name brand hot sauce is the best don’t care what anybody else says.

this will help get rid of the “gamey” flavor and also season it up as that wash soaks into the meat.

from there, it depends on what you’re doing with the gator as to what’s the next step.

if frying it, just pull it out of the wash directly into your batter and toss it in the grease.
