Alligator Balls recipe

1 pound chopped alligator meat
1 tablespoon finely chopped onion
1 tablespoon finely chopped parsley
2 teaspoons lemon pepper
1/4 cup bread crumbs
1 cup vegetable oil
1 egg
2 tablespoons finely chopped celery
2 tablespoons chopped shallots
1/2 teaspoon salt

Combine all ingredients, then form into 1-inch balls. Allow to set for 1 hour.

Dredge with flour and fry until brown. Serve hot.

Louisiana Sweet and Sour Alligator recipe

1 1/2 pounds alligator tail meat, cut into 3/4-inch cubes
2 eggs, beaten
2 stalks celery, sliced diagonally
1 green bell pepper, cut in 1-inch squares
1/2 medium onion, thinly sliced
1 (8 ounce) can unsweetened pineapple chunks
1 (8 ounce) can tomato sauce
4 cups vegetable oil
1 cup pineapple juice
1/3 cup cider vinegar
1/3 cup light corn syrup
1/3 cup firmly packed brown sugar
1/4 cup plus 2 tablespoons all-purpose flour
3 tablespoons cornstarch
2 tablespoons milk
1 teaspoon salt, or to taste
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
Hot cooked rice

Combine eggs, flour, milk and salt; mix well. Add alligator cubes, stirring to coat.

In 2-quart deep fryer, heat oil to 350 degrees F. Deep fry alligator a few pieces at a time, until golden brown. Drain well.

In a 4-quart saucepan, combine pineapple juice, brown sugar, cornstarch, tomato sauce, vinegar, corn syrup, garlic salt and pepper; stir well. Cook over medium heat, stirring constantly until thickened. Stir in alligator chunks, pineapple, bell pepper, celery and onion. Cover and simmer (10 minutes), then serve over hot cooked rice.

This whole Monday thing snuck up on me. I began to send out invitations to the usual gang of friends when it occurred to me that most of them have to work the next day (I'm retired). I started a thread about how it sucks to have the college Championship game on a Monday and at 8:30 so that the West Coast, which doesn't have a dog in the fight, can watch the game, while the EST folks, with BOTH dogs, have to change their sleep patterns. Inherently wrong!

Anyway, it turns out that two other retired buddies can make it over and since my Moeller teacher buddies are in the midst of exam week one or two of them will be here for at least half of the game.

I'm thinking of composing a kind and gentle letter to Gene Smith about the issue. If they don't hear from anyone they assume everything is fine.

Wifey has to get up early Tues, so she cannot watch the game. Would drive to Ohio, but I hate to make that drive by myself. So looks like the fallback is my sister's family here in Georgia.

I am spending the night and taking Tuesday off.

Well, I was planning on going to a big bash at one of my buddies houses that started at noon.

Last week, my brother and his wife had to go to the hosipital. They are pregnant for twins that are high risk. They now have to stay in the hospital every day (possibly until March). My brother and I have always watched every game together and he has been up there for almost 2 weeks now, so I'm heading to Columbus to watch it in a hospital room. Not exactly the most fun, but probably the right thing to do.

Should be a blast as usual.

Ribs at SanAntonioBucks' house sound pretty good, though.

Baseball practice from 5:30-7:00 pm and then simply watching at home with the wife and two sons in our newly remodeled Buckeye basement. I don't have to work on Tuesday (still on break), but the boys have school. They will stay up and watch the entire game...maybe they will make it to school Tuesday, maybe they won't, maybe they will be late, maybe they won't. Sending them to bed during the game, or at halftime, is something that would bother me to my last breath.

BKB and I have specific game mojo that must be adhered to at all times which reminds me, I must purchase Diet Coke, I will have to drink so much Diet coke I won't sleep for days.... remind me next year to start the season off drinking beer as opposed to soda.

Food and beer aplenty, open invite...
