Thread of What You've Eaten, Cooked and/or Drunk Lately

had it hand delivered to me by a friend who gets gator tags every year.
not much gator out here, but if I find a rattlesnake, his ass is going in a jambayala too.
jambalaya is a great "whatever meat" dish. I sued to have this giant cast iron skillet that I bought there at the french market in N'awlins, it was my jambalaya pan. My wife talked me into getting rid of it, can't remember the reasoning but I miss it. I think it was because, according to her, it always looked like it had never been washed. She doesn't understand "seasoning" a pot

I have 2 nice sized ones back home in Louisiana.

when I get a bigger place (or place with bigger kitchen) out here, they're coming with me.

Never had rattlesnake. Tried python once. Tough to chew. Gator is definitely more tender.
i never had rattler either.

i may or may not have eaten water moccasin cooked over an open fire.
was rather interesting flavor. not horrible. not great. just different.

i’ve eaten Nutria before too. that was actually pretty good.

squirrel is good shit.
turtle soup is worth its weight in silver.

fresh alligator is freaking awesome!

I’d describe python as an okay flavor, nothing remarkable, but the texture was strange. Kind of scaly. I’d eat it again but am not dying to try it again either.

Never had Nutria, but had Cuy (Peruvian Guinea pig). It was okay. Not bad but probably only notable because of what it was rather than anything taste wise. Maybe it was how it was prepared.

Alligator is damn good. I had some chopped and blackened gator tail just a few weeks ago. Hopefully those Tigers get their fill this weekend at Death Valley!

Nutria is very similar to rabbit.
had it in a spaghetti with mushrooms. was REALLY good.

gator has to be fresh and has to be cut/cleaned/prepped right.
it’s either AWESOME or shitty.
really no in between

supposed to be fucking cold this weekend out here too (high of 61°).

likely going to cook that Jambalaya outside so all the cute latinas in this complex smells it.

and hears my 90’s grunge music at stupid high volume.

maybe the perky titted one across the street will come over for a beer.

first, get you a nice slab of Alligator tail

beat the absolute shit out of it with a meat hammer.
i mean wear that thing out like she’s a two-bit whore from Gainesville that’s been skimming off the top.

then cut it up into cubes or nuggets.

and place in a wash overnight

will not divulge all of my secrets, but in the wash you’ll need:

some raw eggs
some milk
a generous squirt or two of mustard
garlic powder
some 9Spice
Louisiana hot sauce
Louisiana Crab boil seasoning (powder type)

let that soak for several hours (i almost always go overnight)

takes a little of the “gaminess” and helps tenderize it.

on way home from work tomorrow i’ll grab some Andouille and rice.
