they may have gone to Rouse’s and picked up some stuff in a box that’s called “jambalaya mix” or “etouffee mix” or something like that.

and to the uninitiated, it may look and smell like cajun food.
but at the end of the day, it’s shit from a box.
REAL cajun food don’t come from boxes.

Just to let you know, I'm making the jambalaya recipe for the game that I got from Tigerlaya. It was requested. By several different people.

Your recipe calls for poblanos, huh? Interesting. I planted a pobano plant and it's yielded like a peck of fruit so far. I was going to make Chile Rellenos, but there's plenty for this. Let me read your recipe...

the poblanos and jalapeño adds a lil more flavor than just using bell peppers. not a lot, but a hint more.

I save my bacon grease solely for Cajun food. Do you use stock for the liquid? I know Hatcher made a good suggestion with the sausage water. I usually use kielbasa or smoked sausage so they are already cooked. I have some poultry stock I made and froze, maybe that?

i typically don’t use stock, but have eaten it when other used it.

i like green onion sausage.
but you gotta cook it first.

in those pics, the sausage and crabmeat were leftovers from a boil the night before. can also use leftover crawfish if you got ‘em.
